The
full story.Fausto and Cinzia Cellario are third-generation winemakers in the village of Carrù, on the western edge of the Langhe. The first in the family to make strictly natural wines, they work exclusively with indigenous Piedmontese grape varieties across 30 hectares of organic vineyards, hazelnut fields, and woodland. Fermentations are spontaneous with native yeasts; sulfur is absent or added only in tiny quantities at bottling. Wines are unfined and unfiltered. La Grinozza is a pét-nat made from Grignolino — one of Piedmont's most finicky and beautiful varieties — bottled at the crescent moon during primary fermentation to capture its natural effervescence. Primary fermentation in stainless steel, secondary fermentation in bottle (not disgorged). Low alcohol. Sold in a 1 liter bottle with crown cap. The froth, the cloudiness, the chill — all deliberate. Serve very cold and drink all of it.
