100% Grenache Noir marked by phenomenal freshness and punctuated by roasted notes of coffee and chocolate. The cuvée owes its name to the winery’s master of ceremonies, Sébastien Xavier, who first had the idea to vinify late-harvested Grenaches, verging on overripe. The fruit undergoes brief whole-cluster maceration and the wine matures for one year in old barrels.
