Zero dosage. This cava is crafted from Macabeo and Parellada using the traditional method. It then spends another 15 months on lees in bottle. The palate has notes of biscuit, lime, and white fruit. A great pairing for fish dishes.
Nestled in the foodhills of halfway between the Mediterranean Seas’ Serra d’Ordal and the Parc Natural de la Muntanya de Montserrat lays the small winery of the Rosell Mir Family. The family’s history in the area goes back to September 30th 1474 established by a historic document. This document was uncovered some years ago which granted Guillem Mir, a peasant-farmer, a house, flour mill, fields, vineyards, and woodlands within the terrirory of the Subirates Castle of Saint Sadurni de Subirats. This land has been passed from father to son for over six centuries and 18 generations.
