Pinot Gris, Aligoté and Riesling to make it bright and quaffable. Reminiscent of Muscadet with a couple years of age on it, this PYT is ready for raw oysters, crab boils, squash enchiladas and all the fried things. Direct press into French Oak (90% neutral / 10% new). Full lees aging, racked to stainless steel two weeks before bottling with a small SO2 addition at racking.
