Their 2025 Sancerre is everything you want from the appellation and more: pure, mineral Sauvignon Blanc that smells of grapefruit pith, white peach, and fresh-cut grass, with a palate that crackles with acidity before settling into a long, flinty finish. Native yeast fermentation and aging on fine lees add a subtle richness without sacrificing the wine’s signature precision. This is a classic Sancerre worth cellaring for two to four years, or opening tonight with a plate of oysters and absolutely nothing else.
