From Oyster River: We generally harvest this fruit on the early side for crisp fresh flavors with lots of acidity, but 2022 was a warm dry year on the North Fork of Long Island and the early stuff ripened fast. So 2022 is a bit of a richer, rounder Chardonnay for us, but still with great freshness, and a fantastic tropical fruit character. As usual we split the fruit into three fermentation treatments and blend them together before bottling so we get the aromas and textures of each treatment into one wine. A third gets pressed whole cluster into stainless steel, a third gets pressed whole cluster into old barrels and the final third gets crushed/destemmed and soaked on the skins for 48 hours before pressing into barrels for fermentation.
