Vino Rosso Operaio

I Ca Ro (an acronym for 'i Castelli Romani') was founded in 2019 by four childhood friends from central Rome — Rocco, Fabio, Luca, and Gianmarco — who grew up together, worked in Rome's blossoming enoteca scene, and spent time with small natural winemakers around Italy before deciding to create their own vision of Roman wine. They work the volcanic soils of the Castelli Romani hills south of Rome, where Pergola-trained vines grow on ancient volcanic tufo. 'L'Operaio' ('The Worker') is their manifesto red: 60% Nero Buono (a rare local variety) from Guyot-trained vines on volcanic soil near Circeo, co-fermented with 40% Trebbiano and Malvasia from traditional Tendone-trained vines. 24–36 hours skin contact, fermented in fiberglass, aged in fiberglass. Bottled without fining or filtration. 'A wine for daily hardships and block parties in the square. Made with strong hands and a pure heart.'
