On the Wings of Dawn' Ruster Ausbruch

Heidi Schrock makes one of the definitive versions of a classic sweet wine, rarely seen on our side of the Atlantic: Ruster Ausbruch from Neusiedlersee. A botryris affected blend of Welschriesling and Furmint, both grapes benefit from the fog generated by Lake Neuseedl, as well as the warm radiated from it which lengthens the growing season. Furmint retains the high level of acidity necessary to balance the wine's sweetness, while Welschriesling is more susceptible to botrytis, and contributes to its classic floral and tropical fruit aromas and flavors.
