full story.Terada Honke is one of Japan’s most uncompromising natural brewers, operating in Ibaraki Prefecture with methods that predate industrial sake production by centuries. Katori 90 — named for its 90% rice polish ratio, which leaves far more of the grain intact than conventional sake — is their most rustic and expressive bottle. Brewed with locally grown Koshihikari rice, mountain spring water, and the brewery’s own cultivated koji, the sake is raw, unfiltered, and unpasteurized, presented exactly as it comes from the vat. It’s deeply savory and complex: earthy rice, forest floor, dried mushroom, and a long umami finish that makes you reach for more food and more sake in equal measure. A natural wine lover’s sake.
