full story.100% Chardonnay from 30+ year old selection massale vines planted on clay and limestone in Ardeche, whole cluster pressed into concrete and steel where it wild ferments and ages for 10 months on the lees before getting bottled unfiltered with no sulfur added. Textured, vinous, and heaving with tropical fruit. Off-dry, oxidized, and with a bit of spritz. A welcome companion to mature cheeses, roast chicken Sunday lunches, even fiery aromatic Asian dishes.
