Farming is organic in practice and certified sustainable by EQUALITAS. Grapes hark from three different parcels of Barbaresco DOCG: Treiso, Neive and Barbaresco village itself. The total area is a small 5 hectares. The wide, open hills invite a powerful breeze that keep temperatures well below average for the Langhe. Manual selective harvest, crushing and destemming 200hl steel tank fermentation between 28-32°C then aged in large, 10,000L Slovenia oak barrels for 12 months. Further aging in bottle for a minimum of 26 months. Overall, intervention is minimal and SO2 additions are limited to during the aging process and just prior to bottling.
