The
full story.Les Terres Blanches is a small organic domaine in the Costières de Nîmes, farming chalky limestone soils (the terres blanches of the name) in the southern Rhône with a commitment to native yeasts and minimal intervention. This Ancestral Rosé Brut is made in the traditional méthode ancestrale — bottled before fermentation finishes to capture natural CO₂, without the addition of a dosage liqueur or disgorgement of yeast sediment. It’s hazy, gently fizzy, and distinctly Provençal in character: pale salmon in color with aromas of fresh strawberry, white peach, and dried herbs, and a palate that is dry, mineral, and refreshing from start to finish. At 12% ABV it’s lighter than most sparkling wines, and the lack of dosage keeps every sip precise and food-friendly. A southern French pétillant at its most honest.
