full story.Denny Bini is a humble hero of the Emilian natural Lambrusco renaissance, making just 6,000 bottles per year from a single hectare of organically-farmed vines. The 'Festa' label — a big illustration of various people enjoying a raucous meal together — says it all. This is a wine of conviviality, not contemplation. A blend of five classic Emilian varieties: 30% Lambrusco Marani, 30% Lambrusco Salamino, 20% Lambrusco Maestri, 10% Lambrusco Grasparossa, and 10% Ancellotta. Alcoholic fermentation for 10 days without temperature control, with 5–6 days on the skins. Secondary fermentation for one month in autoclave. Bottled with a crown cap. Unfussy, soulful, and rooted in the earth. Pour it with everything and pass it down the table.
