full story.Maria-João Pato is the granddaughter of João Pato — the original Duckman, a Bairrada pioneer — and daughter of the legendary Luís Pato. Working only with indigenous varieties, she refuses to plant international grapes because she wants her wines to taste exactly like the Atlantic coast where they're made. The White Duck is 85% Bical and 15% Maria Gomes (Fernão Pires) sourced from two vineyards: sandy-soiled Amoreira da Gândara for vibrancy, and chalky-clay Óis do Bairro for richness and structure. Hand-harvested, short skin contact for texture, spontaneous fermentation in stainless steel. Unfined, unfiltered, minimal sulfur. Cool Atlantic breezes off the Bay of Biscay give the wine its signature freshness and salinity.
