full story.Elios was born in 2015 when two friends, Nicola and Guido, walked away from consulting careers to revive their families’ farmland in western Sicily. Working across three sites — Alcamo near the coast, Camporeale at 300m altitude, and Monreale in the hills — they grow only native Sicilian varieties organically. Modus Bibendi Bianco Macerato is a blend of Catarratto, Zibibbo, and Grillo macerated on skins for 20 days in stainless steel, then aged 7 months on fine lees. Apricot, orange blossom, rose petal, and orange marmalade on the nose; well-structured with a light tannic grip, balanced by bright acidity that keeps every glass refreshing. Organic, minimal sulfites (23 mg/L), bottled unfiltered.
