We started Preservation with a simple, stubbornly held belief: that wine made honestly, from organically farmed grapes, without additives or shortcuts, just tastes better. Not just technically — but meaningfully. It tastes like somewhere. It tastes like someone made it.
Every bottle on our shelves represents a small act of preservation. We work with winemakers who farm with care, ferment naturally, and make wine that reflects where it comes from — not what a compromising market demands. We think that matters. And we’ve found that once people taste the difference, they think so too.
Our goal is to keep wine fun, thoughtful, and community-driven — whether that means helping you find your first orange wine, introducing you to your neighbors over a flight on a Friday night, or shipping a box of something special to your door across the country.

Pull up a seat inside or out on our dog-friendly patio and explore our rotating by-the-glass menu. Alongside the wine, we serve Preserved — our small plates menu built on the same philosophy as our cellar. Every ingredient cured, cultured, fermented, dried, or aged. Cheese boards, charcuterie, warm small plates, and a few things to finish.
Can’t make it to Poulsbo? No problem. We ship natural wine to most U.S. states, so you can enjoy our full selection from the comfort of your home. The same care and curation that fills our shelves is behind every box that leaves our shop — with tasting notes included.
We host sommelier-led wine courses, Meet the Winemaker evenings, and special tasting events throughout the year — all in small groups, with real wines. Topics range from pét-nat and orange wine to biodynamics and terroir. We also host private events and buyouts for groups up to 75 guests.

Every single bottle on our shelves is organic, additive-free, and made with little to no added sulfur. No exceptions, no compromises. If it doesn’t meet that standard, it doesn’t make the cut.
