Did you know most commercial wines contain pesticide residues and up to 120 legal additives — including artificial colors, stabilizers, and sugar? Natural wine is different – it just contains grapes, time, and intention.
We select only wines meeting strict criteria: certified or practicing organic farming, native wild yeast fermentation, fewer than 20ppm total sulfur, and zero additives — no fining agents, no filtration, no adjustments. Every glass is traceable to a specific farm and a specific person.

The Preserved menu is designed to eat alongside wine. Build a board with artisan cheeses and cured meats. Order a warm small plate for the table. Finish with chocolate truffles and aged Mimolette. Everything sourced from producers held to the same standard as every bottle we stock.
