This wine comes from a strict selection of Riesling grapes planted on steep limestone slopes in the VDP Rheinhessen. Using organic agriculture with biodynamic practices, Spanier works the vineyard intensively with very reduced yields and time-consuming manual harvesting. In the winery, the grapes are meticulously selected. Fermentation takes place spontaneously with native yeasts in used large wooden casks and stainless steel vats. Finally, to give greater complexity, the wine remains on its lees for a long time.
