Organic and biodynamically grown local grape varieties Carricante, Catarratto and Grecanico Dorato from 70 year old vineyards are aged for 6 months in stainless steel in Emilio’s small winery. Nothing added or taken away from this white wine other than a small amount of sulphites at bottling. This natural wine from Etna is remarkably fresh – similar to a great Riesling – with flavours of lemons, limes, stony minerals and herbs.
